2 cups of glutinous rice flour
1 cup of coconut milk
1 cup brown sugar
3 eggs
1/2 cup melted butter
1/2 teaspoon salt
1/4 cup grated Cheddar cheese
1/4 cup grated coconut
Banana leaves or parchment paper

Instructions:

Preheat the oven to 180Β°C.

In a large bowl, whisk together the glutinous rice flour, coconut milk, brown sugar, eggs, melted butter, and salt. Mix well until the mixture becomes homogeneous.

Add the shredded Cheddar cheese and shredded coconut to the bowl and mix well.

Sisig Recipie

Here is the recipe for Sisig, a Filipino dish made with spicy and crispy pork.

Ingredients:

500g pork (shoulder, belly or loin)
1 large onion, finely chopped
3-4 cloves of garlic, finely chopped
3-4 green chiles, finely chopped
2 tablespoons coconut vinegar or rice vinegar
1 tablespoon of soy sauce
1 tablespoon tomato ketchup
1 teaspoon brown sugar
1/2 teaspoon ground black pepper
1/4 cup of water
1 lemon, cut into wedges
Salt to taste.
2 eggs, optional
Vegetable oil for frying

Instructions:

Start by boiling the pork in lightly salted water for about 30 to 45 minutes or until tender. Drain the water and leave the meat to cool. Cut the meat into small cubes (about 1cm x 1cm).

In a frying pan, heat some vegetable oil and fry the pork until crispy and golden brown. Drain the excess oil and set the meat aside.

In a large frying pan, heat some vegetable oil and saute the onion, garlic and chillies until soft and golden brown.

Add the pork to the pan along with the coconut or rice vinegar, soy sauce, tomato ketchup, brown sugar, black pepper, and water. Stir well and cook for 5-7 minutes or until the sauce has reduced and blended well with the meat.

At this point, if desired, add the eggs. Crack the eggs into the pan and stir constantly until the eggs are cooked through and well blended with the meat.

Serve the Sisig hot with the lemon wedges and white rice.

Here is the recipe for Kare-kare, a Filipino dish made with meat, vegetables and peanut sauce.

Ingredients:

1 kg of beef ossobuco or tripe, cut into cubes
1 cup of peanut butter
1 cup prawn paste (bagoong)
2 cups of beef broth
2 cups of water
2 onions, finely chopped
3-4 cloves of garlic, minced
1 tablespoon of vegetable oil
1 large eggplant, cut into pieces
1 piece bok choy, cut into chunks
1 cup green beans, cut into pieces
1 tablespoon of salt
1/2 teaspoon ground black pepper
1 tablespoon annatto powder (optional)
2 bay leaves
1 teaspoon brown sugar (optional)

Instructions:

In a large pot, boil the ossobuco or tripe with water and salt until soft. Drain the water and set the meat aside.

In another pot, saute the onion and garlic in vegetable oil until golden brown.

Add the beef to the pot along with the bay leaves, beef stock, water, peanut butter, shrimp paste, salt, and black pepper. Mix well and boil for 10-15 minutes over medium heat.

Add the eggplant, bok choy, mung beans, and annatto powder. Mix well and continue to boil for another 10-15 minutes or until vegetables are soft.

If the broth becomes too thick, add a little hot water and stir.

Add brown sugar to taste and mix.

Serve Kare-kare hot with white rice. It can also be served with a side of vegetables and shrimp paste.

Here is a recipe for Lumpia, one of the most famous dishes of the Philippines, which consists of spring rolls filled with meat or vegetables.

Ingredients:

500 g of minced pork or beef
1 onion, finely chopped
2-3 cloves of garlic, minced
1 cup of chopped cabbage
1 cup of grated carrots
1 cup fresh bean sprouts
1 egg, beaten
1 teaspoon of salt
1/2 teaspoon ground black pepper
1 package of Lumpia pasta (or brick pasta)
Fry oil

Instructions:

In a large skillet, sautΓ© the ground pork or beef over medium heat until cooked through. Drain the excess oil.

Add the onion and garlic and saute until translucent.

Add the cabbage, carrots and bean sprouts. Cook over medium heat until the vegetables are soft. Adjust the flavor with salt and black pepper to taste.

Beat the egg and add it to the filling. Mix well and leave to cool.

Take a sheet of Lumpia pasta and place it on your work surface with one corner facing you.

Place 2-3 tablespoons of the filling on the pastry, fold the underside of the pastry over the filling and roll it up until you reach the middle of the pastry.

Fold the right and left sides of the dough towards the center and continue rolling the dough all the way to the end.

Repeat with the rest of the ingredients.

Heat the oil in a deep frying pan and fry the Lumpia over medium-high heat until golden brown and crispy. Drain the excess oil with absorbent paper.

Serve Lumpia hot with a sauce of your choice such as soy sauce or sweet chilli sauce.

1 cube of vegetable or chicken broth
salt and black pepper to taste
coriander leaves or parsley to decorate

Instructions:

In a large saucepan, boil the water with the vegetable or chicken bouillon cube.

Add the pork (if using), onion, garlic, tomatoes, and green chile. Bring to a boil and simmer for about 15-20 minutes, until the meat is almost cooked through.

Add the greens and tamarind. Simmer over medium heat until the vegetables are cooked through, but still crunchy.

Adjust the flavor with salt and black pepper to taste.

Add the fish (if using) and cook for another 5-10 minutes, until the fish is cooked through.

Remove from heat and serve hot with white rice or a slice of bread. Garnish with coriander leaves or parsley.

4-5 kg of whole pork, cleaned and boned
1 head of garlic, minced
2 onions, chopped

1 cup lime or lemon juice
Banana leaves or aluminum foil to wrap the pork while cooking


Instructions:

In a large bowl, combine the garlic, onions, salt, black pepper, brown sugar, soy sauce, vinegar, and lime or lemon juice.

Dip the pork into the marinade and rub the marinade well into the meat, making sure it is well covered. Cover with transparent film and leave to marinate in the refrigerator for at least 4 hours, preferably overnight.

Preheat the oven to 200Β°C. Remove pork from marinade and discard remaining marinade.

Fill the pork cavity with bay leaves and onions. Wrap the pork in banana leaves or foil.

Place the pork on a rack or roasting pan and cook in a preheated oven for 4 to 5 hours, depending on the size of the pork, until the crust is crisp and the meat is tender and juicy.

Remove the pork from the oven and let it rest for 15-20 minutes before cutting into portions.

Puto is a Filipino steamed rice cake normally eaten as snack. Puto can be served to accompany savory dishes like dinuguan or pancit.

The traditional one is made from rice, water, and sugar that is stone-grinded to make the batte. It is normally fermented overnight before steaming them.

Today I’ve tried to prepare Puto and it was very delicious.
