Kare-kare recipie

Here is the recipe for Kare-kare, a Filipino dish made with meat, vegetables and peanut sauce.

Ingredients:

1 kg of beef ossobuco or tripe, cut into cubes
1 cup of peanut butter
1 cup prawn paste (bagoong)
2 cups of beef broth
2 cups of water
2 onions, finely chopped
3-4 cloves of garlic, minced
1 tablespoon of vegetable oil
1 large eggplant, cut into pieces
1 piece bok choy, cut into chunks
1 cup green beans, cut into pieces
1 tablespoon of salt
1/2 teaspoon ground black pepper
1 tablespoon annatto powder (optional)
2 bay leaves
1 teaspoon brown sugar (optional)

Instructions:

In a large pot, boil the ossobuco or tripe with water and salt until soft. Drain the water and set the meat aside.

In another pot, saute the onion and garlic in vegetable oil until golden brown.

Add the beef to the pot along with the bay leaves, beef stock, water, peanut butter, shrimp paste, salt, and black pepper. Mix well and boil for 10-15 minutes over medium heat.

Add the eggplant, bok choy, mung beans, and annatto powder. Mix well and continue to boil for another 10-15 minutes or until vegetables are soft.

If the broth becomes too thick, add a little hot water and stir.

Add brown sugar to taste and mix.

Serve Kare-kare hot with white rice. It can also be served with a side of vegetables and shrimp paste.
