Bibinka Recipie

Here is the recipe for Bibinka, a delicious Filipino dessert made with glutinous rice and coconut.

Ingredients:

2 cups of glutinous rice flour
1 cup of coconut milk
1 cup brown sugar
3 eggs
1/2 cup melted butter
1/2 teaspoon salt
1/4 cup grated Cheddar cheese
1/4 cup grated coconut
Banana leaves or parchment paper

Instructions:

Preheat the oven to 180°C.

In a large bowl, whisk together the glutinous rice flour, coconut milk, brown sugar, eggs, melted butter, and salt. Mix well until the mixture becomes homogeneous.

Add the shredded Cheddar cheese and shredded coconut to the bowl and mix well.

Line a baking tray with banana leaves or baking paper, then pour the Bibinka mixture onto the tray.

Bake for about 25-30 minutes or until the Bibinka is golden brown and the surface is slightly crispy.

Serve Bibinka hot or at room temperature, cut into slices.
