Here is a recipe for Pancit, a typical Philippine noodle dish:


250 g of dry rice noodles
250 g of chicken or prawns
1 chopped onion
4 minced garlic cloves
2 carrots cut into julienne strips
1 bell pepper cut into julienne strips
1 cup of cabbage cut into julienne strips
2 tablespoons of vegetable oil
3 cups chicken broth or water
2 tablespoons of soy sauce
1 tablespoon of cornstarch
Salt and pepper to taste
Lemon wedges to serve


In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and garlic and brown them.

Add the chicken or shrimp and cook until cooked through.

Add the carrots, pepper and savoy cabbage cut into julienne strips and cook for a few minutes.

Add the chicken broth or water and bring to a boil.

Add the dry rice noodles and cook them for about 5-8 minutes or until soft.

In another bowl, mix the soy sauce, cornstarch, salt, and pepper and add them to the saucepan. Mix well to incorporate the ingredients.

Continue to cook until the broth has reduced and the dish has reached the desired consistency.

Serve the pancit hot, accompanied by lemon slices.
