Here a recipe for Sinigang, a Filipino sour soup made with vegetables and meat or fish.
500 g pork, cut into cubes, or 500 g fish (salmon, tilapia or redfish), cut into pieces
1 onion, cut into coarse pieces
3-4 cloves of garlic, minced
2-3 ripe tomatoes, cut into pieces
1 fresh green chilli, cut into pieces
2-3 cups vegetables of your choice (e.g. green beans, bok choy, radish, potatoes, eggplant)
1 cup fresh or canned tamarind
8 cups of water
1 cube of vegetable or chicken broth
salt and black pepper to taste
coriander leaves or parsley to decorate
In a large saucepan, boil the water with the vegetable or chicken bouillon cube.
Add the pork (if using), onion, garlic, tomatoes, and green chile. Bring to a boil and simmer for about 15-20 minutes, until the meat is almost cooked through.
Add the greens and tamarind. Simmer over medium heat until the vegetables are cooked through, but still crunchy.
Adjust the flavor with salt and black pepper to taste.
Add the fish (if using) and cook for another 5-10 minutes, until the fish is cooked through.
Remove from heat and serve hot with white rice or a slice of bread. Garnish with coriander leaves or parsley.
